Classic Gazpacho: A Refreshing Taste of Summer

When summer temperatures rise, few dishes are as refreshing as a chilled bowl of gazpacho. This classic recipe combines garden-fresh vegetables with a touch of spice for a light, flavorful dish that’s perfect for lunch, dinner, or entertaining on the patio. Best of all, it’s even better when prepared the day before, allowing the flavors to blend beautifully overnight.

Ingredients

  • 2 large ripe tomatoes, peeled
  • 1 cucumber, peeled
  • 1/4 cup chopped green pepper
  • 1/4 cup chopped onion
  • 2 tablespoons salad oil
  • 1½ tablespoons vinegar
  • Dash of Tabasco sauce
  • 2 cups Mr. & Mrs. T Cocktail Mix
  • 2 cups V-8 Juice

Directions

  1. Combine all ingredients in a large bowl.
  2. Blend half of the mixture at a time in a blender. Do not completely puree; the soup should retain some texture.
  3. Chill thoroughly, preferably overnight.
  4. Serve over ice or with croutons.

Serves: 6–8
