Sunday Recipes w/ Margi Kyle: Lake Norman Dockside Shrimp Boil

I love recipes that bring people together without keeping you stuck in the kitchen, and this dockside shrimp boil does exactly that. It’s simple, full of bold flavor, and perfect after a day on the lake or a relaxed Sunday with friends and family. Toss it on the grill, open it up, and let the aroma do the rest—this is easy entertaining, the Margi way.
Ingredients (Serves 4)
1 lb large shrimp (peeled & deveined)
12 oz smoked sausage (sliced)
2 ears corn (cut into thirds)
1 lb baby potatoes (halved)
4 tbsp butter (melted)
3 cloves garlic (minced)
1 tbsp Old Bay seasoning
1 tsp paprika
1/2 tsp cayenne (optional heat)
Juice of 1 lemon
Fresh parsley (chopped)
Salt & pepper
Instructions
Pre-cook potatoes Boil for 10–12 minutes until just tender (don’t skip—this keeps everything even).
Build the packets On large foil sheets, divide potatoes, corn, sausage, and shrimp.
Season like you mean it Mix melted butter, garlic, Old Bay, paprika, lemon juice. Pour over each packet.
Seal tightly Fold into airtight foil packets.
Grill or bake
Grill: Medium heat, 12–15 minutes
Oven: 400°F, 15 minutes
Finish strong Open carefully, sprinkle parsley, extra lemon squeeze.
