Sunday Recipes W/ Margi Kyle: Seafood Mac and Cheese
Margi Kyle
Rich, creamy and loaded with tender shrimp and crab, Margi’s Seafood Mac and Cheese turns a familiar comfort-food favorite into something special. Gruyère, cheddar and Parmesan create a velvety cheese sauce, while an Old Bay–seasoned panko topping adds just the right amount of crunch.
Perfect for a Sunday dinner, holiday table or any occasion that calls for a warm and satisfying meal.
Ingredients
1 pound elbow macaroni
8 ounces cooked shrimp, cut into bite-sized pieces
8 ounces crabmeat
6 tablespoons unsalted butter, divided
½ cup panko breadcrumbs
½ medium onion, chopped
2 teaspoons minced garlic
2½ cups milk
½ cup heavy whipping cream
⅓ cup all-purpose flour
1 teaspoon Old Bay seasoning
½ teaspoon paprika
Pinch of nutmeg
Salt and pepper to taste
2 cups shredded Gruyère cheese
1 cup shredded cheddar cheese
1 cup grated Parmesan cheese
Instructions
Preheat the oven to 350°F.
Cook the macaroni until al dente according to the package directions. Drain well and set aside.
In a small bowl, combine the panko breadcrumbs with 2 tablespoons of melted butter. Mix well and set aside.
Melt the remaining 4 tablespoons of butter in a large saucepan over medium heat.
Add the chopped onion and cook until it begins to soften.
Add the minced garlic and sauté for another 30 seconds.
Sprinkle the flour into the saucepan. Stir until completely combined and cook for 1 minute.
Gradually whisk in the milk and heavy whipping cream. Add the Old Bay seasoning, paprika, nutmeg, salt and pepper.
Continue cooking and stirring until the sauce begins to thicken.
Add the Gruyère, cheddar and Parmesan cheeses. Whisk until the cheeses are completely melted and the sauce is smooth.
Gently stir the shrimp and crabmeat into the cheese sauce. Cook just until the seafood is heated through.
Pour the seafood and cheese sauce over the cooked macaroni. Stir gently until everything is evenly combined.
Transfer the mixture to a 9-by-13-inch baking dish. Sprinkle the buttered panko breadcrumbs evenly over the top.
Bake for 30 minutes, until hot, bubbly and golden brown on top.
Serve warm and enjoy!
