Eastern North Carolina Coleslaw

Eastern NC Coleslaw

Having visited North Carolina many times while growing up – Parker’s BBQ was considered a Southern delicacy.  The coleslaw is a little different than that found in Pennsylvania.  It was – and  still is – our family’s favorite side dish for real Eastern NC Barbecue.

Ingredients

1 Head of Green Cabbage

1/4 Cup of Mayonnaise

1/4 Cup of Sugar to taste

1/4 Cup White Vinegar

1 Tsp Yellow Mustard

1 pinch of salt to taste

1/2 Tsp Black Pepper

1/2 TBS of Celery Seed

Directions

  1. Grate the Full Head of Cabbage
  2. Mix Remaining Ingredients in a separate bowl
  3. Add Grated Cabbage and Toss Until Evenly Blended
  4. Refrigerate at Least One Hour Before Serving
