Massaman Curry: A Quick & Easy Meal for When You Have to Dash & Dine!

Dash & Dine: Massaman Curry
I call these packets of Savory Spice my “Dash & Dine” Dinners. They are easy to prepare, delicious, and nutritious! If you are not near their store in Birkdale, Huntersville, NC — go and order online. There’s little measuring and you know it will be a big hit at dinner time. Most of the ingredients you have in your home already.
Ingredients:
6 Tbsp – Water
2 Tbsp – Coconut Oil
2 (13.5 oz.) cans – Coconut Milk
3 Tbsp – Soy Sauce
1 lb. Chicken (boneless, skinless, thighs) or Tofu
Vegetables (I used a bag of frozen red, green, and yellow sliced peppers with onions.)
Sweet Potato (I got mine at Harris Teeter in the produce section, all peeled and cut into chunks. You’ll find it next to the butternut squash — a HUGE time saver.)
Dorot ginger (Harris Teeter, found in the frozen veggies section. The ginger is good for your digestion system!)

Black Salt Garlic (From Savory Spices)
Instructions:
All the directions are on the package but basically:
Make a paste of the Massaman Curry Mix and 6 tsp. of water.
Put it in the pot on medium heat with Coconut oil in it.
Once diluted add the 2 cans of Coconut Milk.
Cook 5 minutes and then add the chicken (cut in bite size pieces) veggies, sweet potatoes, soy sauce and seasonings.
Cook until done (about 35-45 minutes).
I garnished it with cut up cashews and shaved parmesan cheese. You can serve over rice, but I added the everything bagels with the everything spread in the cheese section at Harris Teeter. Accompanied by a glass of red or white wine and dinner is served! Delicious!
