There’s something special about slowing down on a Sunday morning and gathering around the table with the people you love. This Blueberry French Toast Casserole is warm, comforting, and filled with sweet blueberries and a rich custard that bakes into a golden, delicious breakfast. Best of all, you can prepare it the night before, making Sunday morning almost effortless.
Lightly grease a 9 x 13-inch baking dish.
Spread half of the bread cubes evenly in the dish.
Sprinkle one cup of blueberries over the bread.
Add the remaining bread cubes and top with the remaining blueberries.
In a large bowl, whisk together the eggs, milk, heavy cream, sugars, vanilla, cinnamon, nutmeg, and salt until well blended.
Pour the custard mixture evenly over the bread.
Press the bread gently into the custard to help it absorb the liquid.
Cover and refrigerate for at least 6 hours, preferably overnight.
When ready to bake, preheat the oven to 350 degrees.
For the streusel topping, combine the flour, brown sugar, cinnamon, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
Sprinkle evenly over the casserole.
Bake uncovered for 45 to 55 minutes, until the top is golden brown and the center is set.
Allow the casserole to rest for 10 minutes before serving.
Dust lightly with powdered sugar and serve with warm maple syrup.
