Sunday Recipes with Margi Kyle

Looking for a dinner that’s easy, flavorful, and filling? This baked spaghetti squash combines creamy feta, cherry tomatoes, white wine, garlic, basil, and a wonderful blend of savory seasonings. Everything bakes together right inside the squash, making this a simple dinner with lots of flavor.

Ingredients

  • 1 spaghetti squash
  • 1 package chunk feta cheese
  • 1 cup olive oil
  • Up to 1/2 cup white wine
  • 1 tablespoon Gourmet Garden Minced Garlic Paste, or fresh garlic
  • 1 tablespoon Gourmet Garden Basil Paste, or fresh basil
  • 1 teaspoon Black Truffle Parmesan Seasoning
  • 1 teaspoon Smoked Salt & Pepper
  • 1 teaspoon Black Garlic Salt
  • 1 teaspoon Country Onion Herb Seasoning
  • 1 container cherry tomatoes, cut in half
  • Butter, for finishing

Directions

1. Prepare the Flavor Mixture

In a large bowl, combine the olive oil, white wine, garlic, basil, Black Truffle Parmesan Seasoning, Smoked Salt & Pepper, Black Garlic Salt, and Country Onion Herb Seasoning. Mix well and set aside.

2. Prepare the Spaghetti Squash

Cut the spaghetti squash in half lengthwise. Scoop out and discard the seeds.

Using a fork, carefully poke several holes in the squash.

Cut the chunk of feta cheese in half so you have one piece for each squash half.

3. Assemble

Preheat the oven to 350°F.

Place about 1/2 inch of water in the bottom of a large baking pan.

Place both squash halves in the pan. Put one piece of feta cheese into the center of each squash half.

Pour the olive oil, wine, herb, and spice mixture over the feta and squash.

Top generously with the halved cherry tomatoes.

4. Bake

Bake at 350°F for approximately 1 hour.

Check the squash as it cooks. It’s ready when a fork easily pierces the flesh and the inside is tender.

5. Mix & Serve

Use a fork to loosen the spaghetti-like strands of squash. Mix the squash, melted feta, tomatoes, herbs, and seasonings together.

Add a little butter on top while everything is still hot.

Serve and enjoy!
