Looking for a comforting meal that serves a crowd? This week, Margi Kyle shares her “Poor Man’s” Beef Stroganoff—a hearty casserole with ground beef, tender noodles, mushrooms, and a creamy sauce. A splash of red wine adds richness, while Parmesan cheese provides the finishing touch.
Recipe provided by Margi Kyle Serves: 8 Oven temperature: 375°F
Ingredients
1 package noodles of your choice—Margi loves Seapoint Farms Gluten Free High Protein Organic Edamame Noodles
¼ cup butter
1 cup finely chopped onion—frozen chopped onions work well
3 cloves garlic, finely chopped—frozen garlic may be used
1 tablespoon grated ginger—frozen ginger may be used
6 ounces finely chopped mushrooms, canned, fresh, or frozen
1½ pounds lean ground beef
2 tablespoons flour
1 (8-ounce) can tomato sauce
1½ cups Burgundy or another good red wine
1 can beef bouillon, undiluted
1 teaspoon Jane’s Krazy Mixed-Up Salt
¼ teaspoon Jane’s Krazy Mixed-Up Pepper
½ teaspoon black garlic salt
1 cup sour cream
Grated and/or shredded Parmesan cheese, to taste
Olive oil, for tossing with the noodles, if desired
Directions
Prepare the noodles. Cook according to package directions. Drain and set aside. Margi likes to toss hers with a little olive oil and grated Parmesan.
Cook the vegetables. Melt the butter in a large skillet. Add the onion, garlic, ginger, and mushrooms. Sauté until softened.
Brown the beef. Add the ground beef and cook, stirring and breaking it apart, until browned.
Make the sauce. Remove the skillet from the heat. Stir in the flour, tomato sauce, wine, beef bouillon, and seasonings. Return to the stove and simmer for 10 minutes, stirring occasionally.
Add the sour cream. Remove from the heat and allow the mixture to cool slightly. Stir in the sour cream.
Assemble the casserole. Lightly grease a 13 × 9 × 2-inch baking dish. Alternate layers of noodles and sauce, ending with sauce.
Bake. Bake at 375°F for 25 minutes. Top with Parmesan cheese and let stand for 5 minutes before serving.
Serving Tip from Margi
For Parmesan flavor throughout the casserole, toss the cooked noodles with olive oil and grated Parmesan before layering. Finish with shredded Parmesan on top. Delicious!
