Here’s a family favorite from Debbie Amyotte. It’s been a popular dish in the Amyotte family for years. The recipe is good for entertaining at home or carrying with you to your next outing. A definite crowd pleaser.
Fast – Easy — and Delicious!
Ingredients:
1pound corn beef sliced thin
32ounces sauerkraut
16 ounces shredded Swiss cheese
16 ounces shredded sharp cheddar
4-5 T thousand island dressing
4-5 T mayonnaise
Instructions:
Pre-heat the oven to 350 degrees
Cut the corn beef in 1/2” squares
Mix (in a really large bowl) all loose ingredients together, using hands may be easier, (you want it all broken up well ) add the Mayo and dressing and mix well to evenly coat.
Spray large baking dish with non stick spray or wipe with olive oil. ( cake pan size works perfect)
Put mixture into baking dish. Cover with foil. Bake for 45 minutes ( some ovens may take an hour.. you want it cooked through and bubbly). Take foil off last five minutes to brown top a bit.
Let cool on stove Approx 5-10 minutes so juices and cheese settles.
Serve with cocktail rye bread squares, or your favorite hearty or crisp crackers ( I love it with artesian crisp crackers, or Triscuits ) enjoy!
