At the heart of Seaboy is Chef and Owner Jonathan “Jonny” Cox, a veteran of Charlotte’s acclaimed Rare Roots Hospitality group. His culinary journey includes time in several of the region’s most respected kitchens, including Dogwood Southern Table, Fin & Fino, and Chapter 6, along with time spent cooking in Sorrento, Italy. Those experiences helped shape his appreciation for fresh, seasonal, ingredient-driven cuisine.

His philosophy is rooted in hospitality, simplicity, and allowing exceptional ingredients to shine.
