Last Wednesday, my friend Margi and I attended a press tour of the new construction at Birkdale Village in Huntersville, NC. You can read all about the updates here. It was a beautiful, but extremely hot day. When the tour was completed, Margi and I wanted a cool drink and something light to eat.
The atmosphere was cool and elegant. We were greeted at the door by a lovely hostess and we were seated immediately in a booth by the bar (at our request). We were not in the mood to have more than a drink and an appetizer, so the bar area was ideal.
You know that this will be a special treat, whether you sit in their upscale bar or in their beautiful dining room.
It was cocktail hour and we wanted something light to eat. The service was fast, the wait staff pleasant. The drinks were cold and crisp — the appetizers, delicious!
Diced Ahi tuna and avocado tossed with scallions in a sweet sesame soy sauce. Topped with wakame salad and crispy wonton strips.
I have always loved the combination of tuna and avocado. Red Rocks makes it even better by adding a delicious crunch with wonton strips.
Julienne calamari steak lightly breaded and fried, served with house made marinara sauce. It was light and crispy. The marinara rich and full of tomato flavor.
It was the best place to take a moment to recap our work, cool off from the extraordinarily hot weather outside, and have a quick bite to eat. Both Margi and I felt refreshed and ready to go on to our next adventure!
