Along with his interest in Business, Giovanni – because of his extensive travel and exposure to international cultures and cuisines – can speak intelligently about food and ingredients from around the world. Giovanni has chosen Mexican Street Corn to add to your BBQ dinner.

Ingredients
- 4 ears of Corn
- 4 tablespoons butter
- ¼ cup of Mayonnaise
- 1 tsp of Lime zest
- 1½ tsp of lime juice
- Chili powder
- Cayenne
- ¼ cup cotija cheese (grated)
- ¼ cup fresh cilantro
Preparation for Oven
- Preheat oven to 475 degrees
- Shuck your corn removing the husk and silk
- Melt half a stick of butter (four tablespoons) and mix with ⅛ teaspoon of cayenne and ⅛ teaspoon of chile flakes.
- Evenly lather the melted butter mixture onto each ear of corn
- Wrap the ears of corn individually in tin foil and place them onto a baking sheet
- Place the baking sheet in the oven and bake for about 20 minutes turning the tray halfway through baking
- While the corn is in the oven combine mayonnaise, lime zest, lime juice and 4 shakes of cayenne in a bowl (as long as you keep it to this proportions feel free to make as much as you like)
- Take your corn out of the oven, unwrap the tin foil and let the corn cool for 5 minutes.
- Then after the corn is cooled remove the tinfoil from the tray and evenly coat the ears of corn with the lime crema.
- After coating the corn sprinkle a coat of cotija cheese
- Then top with chile flakes and fresh cilantro to taste.
Preparation for Grill
- Heat up grill to medium high
- Shuck your corn removing the husk and silk
- Melt half a stick of butter (four tablespoons) and mix with ⅛ teaspoon of cayenne and ⅛ teaspoon of chile flakes.
- Evenly lather the melted butter mixture onto each ear of corn
- Wrap the ears of corn individually in tin foil and place them on the grill for 6 minutes.
- While the corn is in the oven combine mayonnaise, lime zest, lime juice and 4 shakes of cayenne in a bowl (as long as you keep it to this proportions feel free to make as much as you like)
- Take your corn off the grill and let it cool for a few minutes
- Coat the ears of corn with the lime crema.
- After coating the corn sprinkle a coat of cotija cheese
- Then top with chile flakes and fresh cilantro to taste.
Use cheese as a healthier substitute. It is much lower in calories and lower in overall fat.
