Prosciutto Pear Cups

Cheryl says: “I tried this as a new appetizer to take to a friend’s party. It was an instant hit and I have not stopped making it since. The contrast of flavors from the prosciutto, to the ricotta cheese and the sweetness of the pear – amazingly delicious”.

Ingredients

  • 8 oz prosciutto
  • 8 oz ricotta cheese or substitute with cottage cheese for half the calories. 
  • 2 ripe USA pears 
  • 6 to 8 basil leaves, cut into thin strips

Preparation

  1. Preheat the oven to 375 F.
  2. Cut prosciutto into 24  2 ½ -3 inch squares. 
  3. Press 1 square into each greased cup of a mini cupcake pan. Bake for 15 minutes or until crisp.  Remove from the oven; let cool completely.
  4. Spoon the Cheese into cooled cups. 
  5. Thinly slice pears and arrange slices on top of the cheese, along with a pinch of basil, then serve.

Preparation Hack:

Great to make the prosciutto cups as soon as the evening before .

Foodie Fact: 

I use cottage cheese as a healthier substitute. It is much lower in calories and lower in overall fat.
