St. Charles Zucchini Pie

St. Charles Zucchini Pie

This recipe was given to me by the Chef at St. Charles Hospital. This recipe and the St. Charles Cheesecake have been two of my families favorites for a long time.

Ingredients

3 Cups of Thinly Sliced Zucchini or Yellow Squash (I use the Yellow Squash)

1 Small Onion – Chopped

1 Cup of Bisquick

4 Eggs

1/2 Cup of Parmesan Cheese

1/2 Tsp of Oregano

1/2 Tsp Parsley

1/2 Cup of Vegetable Oil

Directions:

  1. Preheat over to 350 degrees
  2. Pour all mixed ingredients into a 9 inch pie pan.
  3. Bake @ 350 degrees for 40 to 50 minutes until firm
  4. May top with warm cheddar cheese soup, undiluted, straight from can.
  5. Also for a variation – you may add a half a lb finely chopped kielbasa
  6. This makes 6 servings
