Do you love Bruschetta? Who doesn’t! This is Chicken Bruschetta in a dish – without the bread — for easy dining. Garnishing the chicken with fresh basil is the key to the finished product. One chicken breast per person and cut it inhalf. 1/2 Tomato per chicken breast and cut the cheese to your liking. We like it thick so I have been buying the presliced Motzeralla cheese in the cheese department of the grocery store. The ingredients amount are for a serving for 4. Double it and you have doubled your pleasure to your guest or family.
Add a salad and other side dishes you enjoy, and dinner is served!
1/4 cup of white wine
Juice of ½ lemon
1 tablespoons of Gourmet Garden Chunky Garlic in the produce refrigerator section. Where their chopped garlic, celery and other items are. The tube is by the sour cream in the picture.
1 tablespoons of Gourmet Garden ginger in the produce refrigerator section, next to the garlic. Or the frozen or powder ginger. I just love ginger and its health benefits.
1 Tablespoon each- Crazy Jane’s mixed-up salt and pepper
1 Tablespoon of My favorite Black Garlic Salt from Savory Spice in Birkdale Village.
½ cup Balsamic Vinegar
1 cup Olive Oil
Sweet potatoes
Salad of your choice.
Paprika to sprinkle on the pounded chicken- both inside and on the outside.
1 sliced tomato and dried with paper towels.
Mozzarella cheese- sliced
Make the sauce to baste the chicken with.
1 tablespoons of Gourmet Garden Chunky Garlic
1 tablespoons of Gourmet Garden ginger
1/2 Tablespoon each- Crazy Jane’s mixed-up salt and pepper
1/2 Tablespoon of My favorite Black Garlic Salt from Savory Spice in Birkdale Village
½ cup Balsamic Vinegar
1 cup Olive Oil
Mix this all together and let it sit for a bit. I spray a pan with nonstick spray. On you cutting board- baste the chicken inside with the oil and vinegar mix. Sprinkle extra papkra, salt and pepper on the chicken before you add the tomatoes and cheese. Layer the tomatoes and cheese. Baste the cheese and tomatoes’ once again. Flip the extra side over to cover the cheese and tomato. Season the outside with paprika, salt and pepper and of course the black garlic salt. Baste the outside layer one more time and pour the wine and lemon on the bottom of the pan.
