The eggplant chips with marinara were a delightful dish with a satisfying crunch and rich flavors. While the breading made them a less healthy option compared to the watermelon pizza, the use of eggplant as the base still emphasized real, wholesome ingredients. The marinara sauce added a robust, tangy complement to the chips, making it a tasty and enjoyable choice. Anything fried and topped with cheese is tough to put on a healthy scale, but it was delicious.
