Restaurant Reviews: Zapata’s – Cornelius

New decor, same delicious Mexican food!

I love going out to lunch! When I’m in the mood for Mexican food, there is only one place to go — Zapata’s in Cornelius. The restaurant is brighter and more colorful with its new blue chairs, renovated booths, handblown glass lighting, wall colors, traditional and modern Mexican artwork.

The food is authentic and delicious!

I have been eating lunch at Zapata’s for several years now. The staff is always friendly and the service is quick. If you only have a short time for lunch, you can get in without feeling rushed. BUT, my favorite thing to do, is take my time. The place even when busy has a quiet, comfortable atmosphere. It’s a great place to catch up with friends and have a good meal.

My favorite lunch is the Bombay Chimichanga!

Stuffed w/spinach, roasted corn, green peppers, caramelized onions, roasted jalapenos, carrots and queso fresco — this vegetarian option is so delightful, you’ll never miss the meat! (And if you aren’t feeling adventurous, there are five other chimichangas with beef, chicken, steak, or shrimp!)

There are 3 locations in the Charlotte metropolitan area

Lake Norman (Cornelius) is my favorite local spot. There is also a location in Ballantyne and University Plaza.
